My schedule has been full the last few weeks but I've also been overwhelmed with gratitude. It's hectic, but I'm doing what I love and am more content than stressed.
That being said, cooking and house projects haven't been a priority as of late. This meal was perfect because it took about 25 minutes from start to finish to prepare. It's the first time we've tried Freekeh and we both liked it!
Don't know what Freekeh is? (I didn't.) Here's a little info:
Ginger-Tamari Freekeh Stir-Fry
Vegetarian. Serves 4. (Or 2 really hungry people.)
- 1 package Freekeh (I used Tamari)
- 1 head of broccoli, chopped
- 1 tbsp coconut oil
- 3 cloves garlic, chopped
- Juice of 1 lime
- 1/4 c Braggs liquid aminos (could sub soy sauce)
- 1/4 c water
- 1-1/2 tsp Dijon mustard
- 1 tsp grated ginger
Prepare the Freekeh according to package instructions. (It's just like making rice or quinoa.)
Melt coconut oil in a pan over medium heat (I used a Wok) and add garlic and then broccoli. Stir frequently until cooked — about 10 minutes.
While the broccoli is cooking, prepare sauce. Mix lime juice, liquid aminos, water, Dijon mustard and grated ginger in a bowl.
Add sauce to broccoli and cook another 2-3 minutes.
Serve with broccoli mixture over Freekeh. I added Sriracha because Sriracha.
